Wolfberry Energy Drink

One of the many ways that people enjoy the health benefits of the wolfberry is by drinking energy drinks. There are a few companies that make a wolfberry energy drink. It is important to look at the ingredients. Try to choose one that makes its drink with fresh juice, not powder. Wolfberry powder is still nutritious but juice offers more of wolfberry nutritional benefits. In general, the rule is fresher is better. Powder loses some of it health benefits in the production process.

Another way to enjoy the benefits of wolfberries while on the go is through energy bars. There are some companies that manufacture wolfberry bars but if you decide that you want to give homemade a try, then here is a great recipe:

Wolfberry Energy Bars

Ingredients:
1 cup goji berries (a.k.a. wolfberries)
1 cup oats
1 cup cashews and/or macadamia nuts
3 tbsp honey

Directions:
Chop the berries, oats and nuts in a food processor.
Place the mixture into a bowl and add the honey and a little water.
Mold the mixture into bar shape.
Place on a pan and refrigerate for a few hours to set.

Wolfberry Soup Recipe

Ingredients:

2 tbsp butter
1 lb baby carrots or chopped carrots
1 onion
6 cloves of garlic
1 teaspoon ginger
2 fresh bay leaves
2 tbsp dried wolfberries (aka gojo berries)
4 cups chicken stock
Salt, pepper to taste
1/2 c cream
1/3 c honey
2 tbsp agave nectar
1 tbsp lecithin

Directions:

In a large saucepan melt the butter and add carrots, onion, and bay leaves.
Cook for 5 minutes or until onions are translucent
Add wolfberries and chicken stock.
Season with salt and pepper
Cook until the vegetables are soft
Take the mixture off the heat and put in a blender. Blend well and strain the mixture back into the saucepan.
Add the honey, agave nectar and lecithin.

Heat until the soup just starts to boil and serve immediately.
