I just finished picking 2 bushels of elderberries, with more to come. I want to make wine with EB.
I made EB. wine last year and it turned out pretty good, I should have waited for it to mature but I enjoyed it just the same.
My question is can I make the wine with the stems still on the berries? Like they do with grapes. Do you know if anyone has tried that and how it worked out?
Thanks for your knowledge and web page

I can’t say I’ve tried it but all parts of the elderberry plant are toxic except the ripe berries so I wouldn’t recommend it. Try freezing the clusters in small bunches so they will stay frozen as you hand strip them in a big pan. Then remove the insects like the big green stinkbugs that like to hide in the bunches or better yet give the heads a shake as you pick them to expel the critters.
