Cherry Crisp with Buttermilk Ice Cream

This is one of the best ways to enjoy the antioxidant benefits of tart cherries. They are not baked long enough to lose out on the benefits of fresh cherries, yet long enough to make them soft and enjoyable.  Substitute any baking fruit into this recipe or make a mixture and experiment.

Ingredients:
2 cups of tart cherries
1/2 cup of sugar
2 T all-purpose flour

1/2 cup of oats (quick)
1/2 cup of all-purpose flour
1/2 cup of brown sugar (packed)
1/8 t of baking powder
1/8 t of baking soda
1/4 cup of melted butter

Instructions:

  1. Get the oven to 350.
  2. Prepare one 8 or 9 inch dish or 4 small glazed ceramic bowls by spraying with cooking spray.
  3. Mix sugar, cherries and 2 T of flour in a bowl.
  4. Fill baking dish(es).
  5. Mix together remaining ingredients and distribute crumbles evenly.
  6.  Bake for 30-35 minutes.
